The serum amyloid A (SAA) test is a blood test used to measure the level of the protein serum amyloid A, which is a marker of inflammation. SAA is produced by the liver and released into the blood in response to inflammation. High levels of SAA can indicate the presence of acute or chronic inflammation and are useful in monitoring various inflammatory and infectious diseases.
